It is now autumn. The nights are drawing in. The leaves are falling. And the urge to eat apple crumble is growing.

I don’t bake much, but before diagnosis I did enjoy baking, particularly things like Victoria sandwiches, shortbread, lemon meringue pie, and of course apple crumble. Obviously these are all things that are not so good for you if you are diabetic.

But it is the autumn. So I made some apple crumble for Michael and me.

I noticed was how easy it was. Last time I made apple crumble–probably early spring this year–the whole process exhausted me. I made the crumble topping itself. I rested. I peeled the apples. I rested. I sliced the apples. I rested. I assembled the whole thing. I rested. This time, I just did the whole thing in one step; no rests required. Although I was only diagnosed about six months ago, I think I have been unwell with diabetes for a lot longer.

The crumble smelled beautiful when I took it out of the oven. Initially, I was going to have one small servingspoonful, but I ended up having two quite large spoonfuls. I was quite proud of how it tasted. Clearly I hadn’t lost my baking instincts!

After finishing it, I went for a walk. This was partly to bring my blood glucose down, and partly because I needed a few more steps to hit my 10k goal.

Two hours after eating, I measured my blood glucose, preparing myself for the worst. It was actually a comfortable 6.0 mmol/L (108 mg/dL). I seem to have this under control!
